Un-baked vegan "cinnamon bun"

This is the sugar free and vegan version of the Swedish "cinnamon bun". As it's not even baked in the oven you may argue this can't be called a cinnamon bun. Although I agree, they taste surprisingly similar and my kids love them just as much.


Ingredients:


The "dough":

100g cashew nuts

40g porridge oats

30g dessicated coconut

8 dates

a pinch of salt

1 tbsp water


Filling:

60g almonds, soaked in water for 30 mins

1 tbsp cinnamon

8 dates

1 tbsp water

Method:

1. Roast the cashews and oats in the oven at 100°C for about 10 minutes. Mix the "dough" ingredients in a food processor and then roll it out flat between two sheets of baking paper.


2. Mix the filling in the processor and spread it over the "dough". Roll it up and put in the fridge to set before you slice it.


Then, let your family tuck in and enjoy a guilt-free treat!
