Orange blondie "kladdkaka"

This cake is a huge success; gooey and golden. My secret ingredient is turmeric, which boosts the immune system whilst tasting and looking great.

Ingredients:

100g butter

100g white chocolate

120g unrefined caster sugar

2 eggs

130g plain flour

1 tsp turmeric

Grated zest of an orange


Method:

1. Preheat the oven to 175°C with the fan setting.


2. Melt the butter in a pot on the stove. Add the white chocolate and stir until melted. Turn the hob off and remove from the heat. Stir in the sugar and eggs and mix until smooth. Add flour, turmeric and the zest of about half an orange (save the rest for grating over the top of the cake). Mix until the batter is smooth.


3. Prepare a springform cake tin by greasing it with some coconut oil or butter. Dust it with desiccated coconut or fine breadcrumbs to prevent sticking. Pour in the batter. Bake for about 15-20 minutes. You’ll want this cake to be gooey in the middle so start checking it with a toothpick or cake tester after 15 minutes; it easily gets over baked.


4. Once cooled slightly, dust icing sugar and grate the rest of the orange zest over the top. Enjoy with cream or ice cream and seasonal fruits or berries.
